Chia Peanut Butter Oatmeal Chocolate Chip Cookies ala Grand Central

Fresh Cookies out of the Oven and Smelling Great

I started with a recipe for Grand Central Baking Company’s incomparable oatmeal cookies, and made a few brief modifications.

The peanut butter can be replaced with a second 4oz stick of butter. Chia seeds are a healthy treat that also go well in puddings, but if you don’t like them, you can easily leave them out!


  • 2 cups (10 oz) all-purpose flour
  • 2 3/4 cups (9 oz) rolled oats
  • 1 cup (6 oz) chocolate chips or chunks
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 1 tsp salt (omit if using salted butter)
  • 3 tbs chia seeds, hemp seeds, etc
  • 1/2 cup (8 oz, or 1 stick) room temp unsalted butter
  • 8oz (usually half a jar) peanut butter
  • 3/4 cup (7 oz) granulated sugar
  • 1 cup (7 oz) packed light brown sugar
  • 2 room temperature eggs
  • 2 tsp vanilla extract


  1. Preheat your standard oven to 375F, or for a convection oven, 350F.
  2. In one bowl, mix the dry ingredients (left column above)
  3. In your stand mixer, cream together the other ingredients (right column above)
  4. Once the wet ingredients are well mixed, dump in the dry ingredients.
  5. Mix slowly, in bursts until everything is just barely sticking together. Then stop!
  6. Make balls of dough and smash them down to cookie shape on the pan. They do not spread very much at all, so what you shape is what you’ll get.
  7. Bake just until the slightest brown shows. Depending on the size of your cookies and type of oven, this will happen in 12-20 minutes.
  8. Cool at room temp, scrape off cookie sheets, and serve as soon as you dare!
