A recipe for those who like walnuts. A lot.
Combine wet ingredients in mixer:
1c Brown Sugar
1c White Sugar (unbleached)
1 stick kerrygold butter just warm enough to blend (8oz, or two normal sticks)
1/2 tsp almond extract
1/2 tsp vanilla extract
Blend until creamy. Thoroughly mix the following dry ingredients and then add to the mixer:
4c walnuts coarsely chopped (food processor works best)
3c all purpose flour
2c chocolate chips
1/2 tsp baking soda|
1/2 tsp baking powder
425F in a toaster oven, middle rack, about 8 minutes for ice cream scoop sized cookies. Yield is about two dozen cookies of that size.
